After our moment in the mountains, we made our way back down to Denver for a short trip before making our way back east. We stayed at the Halcyon Hotel, which we adored. Complimentary coffee/wine all day, a record player (records included) in the room, a rooftop pool, it was perfect. They also have Quality Italian Restaurant in their hotel and it was delicious. A good chunk of the group were vegans or pescatarians, so we opted for this delicious vegan spot for brunch one day, Watercourse Foods. We indulged in lavender mimosas and vegan brunch. While walking around downtown, we stopped at The Denver Central Market and Union Station.
What I loved most about Denver was the blend of nature and city. You’re moments away from some of the most beautiful mountains the world, everyone is riding their bikes and most of all people care about the environment. If it was near the ocean, I’d highly consider moving there. Have you been to Denver? Where are you favorite spots?
